Zucchini Bread…YUM!


I am so excited to share this adventure in baking!  Our local farm share  had so many zucchinis in the fall that I had to think outside the box and find a way to put them to good use.  I heard people either love or hate Zucchini Bread…and I must say, after this baking experience, I am on the ZB-Lover side of the debate… especially with chocolate chips and a few walnuts added for a delicious crunch!


1 large zucchini – grated (approx. 2 cups)
3 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
3 eggs
2 1/4 cups white sugar
3 tsp vanilla extract
1 cup chopped walnuts
**Optional: 1/2 cup semi-sweet chocolate chips


1. Preheat oven to 325 degrees.
2. Grease and flour 2 loaf pans.
3. Sift flour, salt, baking powder, baking soda, cinnamon and nutmeg together in a bowl.
4. Beat eggs, oil, vanilla and sugar in stand mixer.  Add dry ingredients to the creamed mixture.  Mix well.
5. Stir in zucchini, nuts and chocolate chips.
6. Pour batter into prepared pans.
7. Bake 40-60 minutes, or until toothpick comes out clean.
8. Cool in pan on rack for 20 minutes.  Remove bread from pan and allow to completely cool.

Grating Zucchini?

Step 1

Cut both ends off of the zucchini and scrub it with a vegetable brush under warm running water. Make sure to remove any dirt from the outside of the zucchini since you will keep the skin on for grating.

Step 2

Set a standup box grater on a plate or cutting board on the counter. The plate or cutting board will catch the grated zucchini.

Step 3

Shred the zucchini by continuously running it over the large holes of the grater.
